Have you ever thought why chillies are hot? I have! I'm going to explain why they are hot. Chillies have a chemical called Capsaicin, and you might think it is a kind of acid but it's not. Capsaicin is an oil that attaches to your cells that feel heat and pain and inject calcium ions. Hotness of chillies is measured in Scoville Heat Units. This is pretty much how how long are what you need to do to dilute the oil of the chilli until we cant taste any hotness. A paprika is 0 SHU, but thing that are hot for average people like Tobasco sauce is measured in 8000 SHU. A really hot chilli like the Habanero clocks in 350,000 SHU. That's bonkers! But that nothing, a man in England cross bread the Bhut Jolokia and the Naga to make the one of the hottest chillies in the world measuring at 1.3 million SHU!!!! But that's not it, a new pepper came named the Trinidad Scorpion Butch T, labs show that it is the hottest pepper at 1.4 million SHU. Not hot enough? Law enforcements use pepper spray that is 5.5 Million SHU. Pure Capsaicin is 16 million SHU so hot that you don't feel it as much as the Butch T. BUT!! Resiniferatoxin is 1000 times more hotter than Capsaicin soo hot that you don't feel it and it kills your cells. It's soo strong it can relieve pain from dogs.

That is one crazy pepper! I can barely enjoy the jalapeƱo pepper in my green salad! I don't know who could withstand this hottest pepper! That's just crazy. Why would someone want to sweat and feel this heat? That's not enjoyment...just give me bell peppers any day. :) Great job Matteo!
